Out of any scheme, like the period we are living in, today we would like to give you a delicious and simple idea for your Easter lunch for 2 people based on seasonal first fruits. Get ready for the to cook: 2 duck eggs, 6 asparagus, 6 slices of raw ham, 30 g of Parmesan cheese in thin flakes, black pepper pounded in a mortar. Slowly dip the duck eggs into the boiling water and let them boil for 6 minutes. Remove them from the water and lay them on the egg cups.In the meantime, whiten the asparagus in boiling water for 3-4 minutes until softened. Soak them in water and ice to cool them.Place a slice of ham on a pastry board and place an asparagus and a little Parmigiano Reggiano on top. Wrap the asparagus with the slice of ham. Open the top cover of the duck eggs and serve together with the asparagus rolls to dip.
