EASTER CAKE

Since the 800 period, eating habits have changed, resembling more and more to ours, both in the “what” and in the “how” we ate. On important occasions – such as Easter – the use of the “Russian service” became more widespread: the dishes were served directly at the table in large serving dishes, following an order similar to that of today. The conclusion was always with dessert, a name that derives from the French word “desservir”, that is, to be canceled, and therefore indicated the last dish of the dinner. An Easter cake is the Colomba born from the desire of a Milanese pastry chef to create a cake similar to panettone but destined for the Easter holidays, the Colomba soon spread to all Italian regions, even if with different characteristics. We are sure that despite the prescription period we are going through, we will all have a good and peaceful Easter!
